Oatmeal Chocolate Chip Cookies

1 C unsalted butter, softened
1 C brown sugar
1 C white sugar
2 tsp. vanilla extract
2 T milk
2 eggs
2 C Flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 1/2 C old-fashioned oats (not instant)
1 12 oz. Bag of semi-sweet chocolate chips
1 12 oz. Bag of white chocolate chips
1.5 C walnuts (optional)

Preheat oven to 350 degrees. Cream butter with white and brown sugar in a mixer. Add vanilla, milk and eggs. Add the flour, salt, baking soda and baking powder to the creamed mixture and beat to combine. By hand, stir in oats, chips and nuts. Drop 1.5" on greased cookie sheets. Bake for 12 min. Let sit for 1 min and put on cooling racks.

Variations:
For fatter cookies, chill dough overnight, then roll into 1" balls, set on the cookie sheets and bake.

Chocolate Shortbread Cookies

Extra Shortbread Cookies

1lb butter, softened
1 C White Sugar
1.5 tsp almond extract
1.5 tsp vanilla extract
4 C Flour
6 oz. bittersweet chocolate bar, chopped

Preheat oven to 350 degrees. Cream butter and sugar together until light and fluffy (Do not melt better!). 10-15 min using a mixer. Add the extracts and mix well. Mix in the flour loosely and hand mix. Chop up chocolate bar and add to dough. Bake on a lightly greased baking sheet. The mixture will be very crumbly, try to mash into 1" balls. Bake for 15-20 min until bottom is lightly brown.
